LIGHT SPANAKOPITA

Spanakopita (spinach pie) is a traditional dish, and could be called the "face" of greek dishes, along with other traditional ones. It's a great choice for breakfast, with a glass of fresh juice for better iron absorbtion, as a snack for work or school, as lunch qith some salad and extra feta, or even as a light dinner. It is also a great way to add spinach into our diet. The following recipe is a lighter version of spanakopita without fyllo dough, for less fat, but the same enjoyment.

Ingredients:

300gr spinach

1/2 cup spring onions, finely chopped

2ts dill, finely chopped

2ts parlsey, finely chopped

1/2 cup shredded feta cheese (can be low fat)

2tbs parmesan cheese

2ts baking powder

1/2 cup all purpose flour

2/3 cup low fat milk

1ts olive oil

2 large eggs, beaten

1/2ts salt

Pepper

Olive oil or cooking spray for the pan

Instructions:

Preheat the oven at 200°C.

Lightly oil a pie pan

Mix the spinach, the onions, feta, dill and parsley in a bowl and spread them on the pan.

Shift the flour and bakin g powder in another bowl.

Put the rest of the ingredients in the bowl, mix well and pour the mixture in the dish. Bake for about half an hour, or until the knife comes clean out of the center of the pie.

Let it cool for at least 5 minutes before serving.
