A healthy choice for everyone, no matter the age, and customizable depending on one's preference. It is also possible to make a big batch, freeze them and heat up some when you want to. They last 3 days in the fridge, in an airtight container, and up to 3 months in the freezer.<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<ul>\n<li>2 eggs<\/li>\n\n\n\n<li>220gr 2% fat greek yoghurt<\/li>\n\n\n\n<li>100gr flour (can be substituted with oat flour)<\/li>\n\n\n\n<li>70-100gr shredded cheese<\/li>\n\n\n\n<li>100gr chicken breast<\/li>\n\n\n\n<li>3tbs olive oil<\/li>\n\n\n\n<li>salt, pepper, and any other seasoning you like<\/li>\n\n\n\n<li>peppers or other vegetables you like (we prefer seasonal veggies!)<\/li>\n<\/ul>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ul>\n<li>Shred the boiled chicken and set it aside<\/li>\n\n\n\n<li>Beat the eggs in a bowl, add the yoghurt and keep mixing<\/li>\n\n\n\n<li>Add the olive oil and slowly incorporate the flour<\/li>\n\n\n\n<li>Seasoon and add the veggies, chicken and cheese. Mix once more.<\/li>\n\n\n\n<li>Oil a muffin pan and add the mixture<\/li>\n\n\n\n<li>Bake in a preheated oven for 20-30mins at 180\u00b0C<\/li>\n<\/ul>\n\n\n\n<p>Tip: if the vegetables you want to use have a high concentration in water, the muffins will become soggy.
