It's a great choice for breakfast, with a glass of fresh juice for better iron absorbtion, as a snack for work or school, as lunch qith some salad and extra feta, or even as a light dinner. It is also a great way to add spinach into our diet. The following recipe is a lighter version of spanakopita without fyllo dough, for less fat, but the same enjoyment.<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<p>300gr spinach<\/p>\n\n\n\n<p>1\/2 cup spring onions, finely chopped<\/p>\n\n\n\n<p>2ts dill, finely chopped<\/p>\n\n\n\n<p>2ts parlsey, finely chopped<\/p>\n\n\n\n<p>1\/2 cup shredded feta cheese (can be low fat)<\/p>\n\n\n\n<p>2tbs parmesan cheese<\/p>\n\n\n\n<p>2ts baking powder<\/p>\n\n\n\n<p>1\/2 cup all purpose flour<\/p>\n\n\n\n<p>2\/3 cup low fat milk<\/p>\n\n\n\n<p>1ts olive oil<\/p>\n\n\n\n<p>2 large eggs, beaten<\/p>\n\n\n\n<p>1\/2ts salt<\/p>\n\n\n\n<p>Pepper<\/p>\n\n\n\n<p>Olive oil or cooking spray for the pan<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<p>Preheat the oven at 200\u00b0C.<\/p>\n\n\n\n<p>Lightly oil a pie pan<\/p>\n\n\n\n<p>Mix the spinach, the onions, feta, dill and parsley in a bowl and spread them on the pan.<\/p>\n\n\n\n<p>Shift the flour and bakin g powder in another bowl.<\/p>\n\n\n\n<p>Put the rest of the ingredients in the bowl, mix well and pour the mixture in the dish.
